Avocado Feta Crack Dip

You know when you take food to a party, and you get to the end of the night and you check to see how much is left in your dish, and it's basically all still there? This is NOT one of those dishes... This dip is sure to get devoured!


If you like avocados and feta, this is the dip for you! And if you don't like avocados or feta, who are you?!?!?


I have made this dip so many times that I don't really measure anything anymore, I just do it until it tastes right - that's the beauty of this recipe... you can adjust it to your taste. If you love onion, add a little more, if you aren't big on tomatoes, use less tomatoes. If you're like me and love lime, add some more in! I tried to estimate the ingredients I use for this dip, and have included them below, but seriously... you do you! Personalize it, and share with me what you changed and how you liked it in the comments!



Ingredients:

  • 3 avocados

  • 2 roma tomatoes

  • 1/2 red onion (finely chopped)

  • 2 limes

  • 1/3 cup of feta

  • 2 tbsp olive oil

  • 2 tbsp red wine vinegar

  • 2 tbsp (or a handful) of parsley

  • salt & pepper to taste



Steps:

  1. Chop the onion finely (helpful to use an onion chopper like this one) & put in bowl

  2. Dice tomatoes & add to bowl

  3. Cut avocado in half and slice the avocado roughly 4 times lengthwise and 5 times widthwise, and then use spoon to scoop out the squares into bowl.

  4. Juice limes into bowl & stir

  5. Chop parsley finely and add to bowl

  6. Add in feta, olive oil, vinegar, and salt and pepper.

  7. Stir one more time & garnish with a little more feta!



This is a perfect recipe for a summer barbecue! I like to serve it with Late July's multigrain chips for a healthy and refreshing party dip (or an on-the-go mom lunch!)
